Vinification Pre-fermentation : Some destemming is carried out and parcels of whole bunches are pressed as well. The must is then cold settled prior to fermentation Yeast: Cultured and indigenous yeasts are used Fermentation vessel: The wine is fermented in 2500 litre stainless steel tanks and 300 litre French oak barrels Duration: 2-3 weeks Temperature control: 12ºC-15ºC Malolactic fermentation: No malolactic Ageing: The wine spends 6 months on its lees the proportion in barrels undergoes batonnage. There is no new oak, with the age of the barrels ranging from 2-5 years. All the barrels are medium toast Allier oak, with tight to very tight grain Racking: No racking Blending: Blending takes place before stabilisation Final blend: 100% Chenin Blanc Fining / filtration: The wine undergoes benonite filtration before sterile filtration Bottle ageing: Usually 6 months prior to release Production: 275 cases Closure: Natural cork
